Matcha Muffins | #BakewithJackie

Hi everyone, Today I will be sharing a recipe that I use to make Matcha muffins, whether you're a beginner or an advanced baker, you can definitely make this! I've also decided to start a new video series on IG and Facebook called Bake with Jackie - where I will share some recipes as well as experimenting different bakes! Now, on to the recipe...

I've been obsessed with Matcha recently... I've made Matcha cookies and Matcha macarons, and I've also decided to make Matcha muffins. The method for this recipe is SUPER simple. It will literally take you 10 minutes to make and around 20 minutes to bake so in around 30 minutes you will have freshly baked Matcha muffins!! I've experimented this recipe with blueberry muffins as well (not adding in Matcha powder) and it was delicious too! Maybe I'll share the recipe for blueberry muffins in the future.

Here is what you need to make 8-9 muffins...

Ingredients: (wet ingredients) 2 Eggs 65g Vegetable Oil 250g Milk (I used Coconut Milk)

(dry ingredients) 110g Sugar 175g Cake Flour (can also use Plain Flour) 1/2tsp Salt 1/2tsp Baking Soda 2tsp Baking Powder 15-20g Matcha Powder

Method: 1. Preheat oven to 180°c 2. Mix together the dry ingredients* 3. Whisk together the wet ingredients in a separate bowl 4. Sieve the dry ingredients into the wet ingredients and mix until combined 5. Pour the mixture into muffin cases and add chocolate chips if desired 6. Pour 1 tbsp of water into each of the empty muffin tins 7. Bake at 170°c for 15-20 minutes (this depends on your oven, mine takes around 20-22 minutes)

*I like to sieve mine together to make sure everything is mixed together well.
